The idea is to be able to assign the color to the particular value of the pie chart and fix it there.
Currently, if the value has a particular color but then will be hidden by the filter, the color is re-assigned to a different value, which changes the visual setup of the whole chart.
Please see the example on the screenshots:
Role Developer has a pale green color; after filtering out, the color is re-assigned to the role Responsible.
This happens regardless if colors were applied as a default or changed manually by the view owner.
